Oh tequila, if there is a “bad boy” of liquors this one probably gets that title. But don’t be fooled by its reputation for being a party drink, fine tequila can be an excellent sipping drink, no lime or salt needed. Tequila is a type of mezcal, however since it must be made from at least 51% blue agave it is a very specific and unique form of mezcal. It may also be one of the more painful to make, since the blue agave plant can take up to 8 years to mature in VERY specific conditions. Even after all of that it is a one-time use plant, once the parts need for the drink are picked that’s it and it’s another 8 years for a new plant to grow.
You appreciate that bottle a little more don’t you? There’s good news though! Tequila is one of the fastest liquors to go from distilling to sales! The first thing you need to know about buying tequila is that the 100% agave bottles are typically far more sought after than the bottles that meet the minimum 51% percent, also called Mixtos. Aging however can make a world of difference.
Blanco – also known as “white” or “silver” tequila. This is tequila that is bottled either right after being distilled, are aged 2 months or less before being bottles. The sharp taste makes it a real eye opener as a shot (lime and salt recommended).
Reposado – or “rested” tequila is aged for 2 months to just under 1 year in oak barrels. Its slightly mellowed our flavor makes it better for mixing cocktails.
Anejo – or “aged” or “vintage” tequila is aged in oak barrels for at least 1 year and up to 3. This is the start of the tequila you can sip on and really appreciate the intricacies of flavors without as much of the characteristic burn.
Extra Anejo – also known as “extra aged” or “ultra aged” and is one of the most expensive and sought-after bottles of tequila. Aged for a minimum of 3 years this tequila is the crème of the crop and possibly the smoothest taste of tequila you’ll ever find.
